Farmaggedon Food
I realize everyone is in Iowa Week mode right now, so I'll probably have to bump this next week. However, the KSU game is going to be my turn to have our little group of Cedar Valley clone fans over. I was thinking that it would be cool to do a bunch of hot foods that had doomsday-y names to them in honor of the budding rivalry, but literally the only thing I've been able to think of is Atomic Wings. If anybody has any good ideas for this, please help me out.

I was watching the BSU/VaTech game at a friend's place last night, and one of his buddies had made cream cheese stuffed peppers wrapped in bacon. He made 2 kinds: jalapeno and habanero. They were delicious, but he didn't hold back with the habanero ones at all. I tried one that was a huge chunk of habanero (I had no idea it was a habanero) and thought I was going to die. But it was delicious.

I read this and just kept thinking about Homestarrunner. Strong Bad does an e-mail where he lists his bottom 10, and one is desserts with dangerous sounding names like, Chocolardiac Arrest, or Chocozuma's Revenge.

This is a great idea, especially because the in-laws just unloaded a bunch of jalapeno's from their garden on us this weekend.

I do a variation of this every now and then that everyone loves. Instead of stuffing the peppers (the only reasonable way to stuff them efficiently is with a pastry bag), I cut the tops off the jalepenos and then in half lengthwise. I usually seed them with a grapefruit spoon. If you want to mild down the jalepenos, soak them in icewater for 30-60 minutes. Dry the peppers on paper towel if you soak them or they are wet.
For the cream cheese "filling" I take one package of cream cheese, half a pound of crumbled bacon, half cup or so of "mexican" shredded cheese, one egg, pinch of salt, black pepper to taste, 1/2" teaspoon each of smoked paprika and ancho chile powder (sometimes chipotle chile powder, sometimes both) and mix it into a creamy paste. Lately I've been adding a dash of liquid smoke which has been great. I then spoon this on the now dry pepper halves. I usually fill a cookie sheet and pack them tightly as I then sprinkle a semi generous amount of shredded cheese on top of everything. (enough to cove, but not enough to weld everything together permamently).
I bake at 325 or so until the peppers are no longer crispy, the cream cheese is set, and the cheese is slightly golden. The egg is key, because if you don't use it the cream cheese melts and runs out. The egg sets the mixture like a custard.
I'm not positive on the amounts, cuz I made this one up and I wing it everytime but it was obviously inspired by jalepeno poppers and no deep fryer.

Did the jalapenos last year for K-State... Very good but none of my friends like spicy food. So know you crowd.
Will be doing those for the Iowa Game though.
Best way to do them...
Cut the tops out and make a slit down the side. Take out the seeds.
Cream Cheese... Add some garlic, season salt, cayenne pepper (ok, I see why they were too spicy). Blend them together until creamy.
Stuff peppers, then wrap bacon down slit and over the top and toothpick.
Grill until bacon is crisp and cream cheese oozing out. Very good....

Not sure on the name for these but if you make them you will love them.
2 tablespoons vegetable oil
1 skinless, boneless chicken breast half
2 tablespoons minced green onion
2 tablespoons minced red bell pepper
1/3 cup frozen corn kernels
1/4 cup black beans, rinsed and drained
2 tablespoons frozen chopped spinach, thawed and drained
2 tablespoons diced jalapeno peppers
1/2 tablespoon minced fresh parsley
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/3 teaspoon salt
1 pinch ground cayenne pepper
3/4 cup shredded Monterey Jack cheese
1 Package of Egg roll wraps
1 quart oil for deep frying - Rub 1 tablespoon vegetable oil over chicken breast. In a medium saucepan over medium heat, cook chicken approximately 5 minutes per side, until meat is no longer pink and juices run clear. Remove from heat and set aside.
- Heat remaining 1 tablespoon vegetable oil in a medium saucepan over medium heat. Stir in green onion and red pepper. Cook and stir 5 minutes, until tender.
- Dice chicken and mix into the pan with onion and red pepper. Mix in corn, black beans, spinach, jalapeno peppers, parsley, cumin, chili powder, salt and cayenne pepper. Cook and stir 5 minutes, until well blended and tender. Remove from heat and stir in Monterey Jack cheese so that it melts.
- Spoon even amounts of the mixture into each eggroll. Fold ends of eggroll wrap then roll tightly around mixture.
- In a large, deep skillet, heat oil for deep frying to 375 degrees F.
- Fry Egg rolls until golden brown.
Dip in Ranch Dressing!
