Barbeque Sauce recipe
This is not your 'run of the mill' sauce. It's one of my faves. I have made it several times. L.C.’s Bold and Spicy Wild Game Chilpotle Pepper BBQ Sauce A really good sauce for most anything you Barbeque 1 Bulb elephant garlic 1 tablespoon olive oil 3 tablespoons bacon fat – rendered from 6 strips smoked bacon 2 Large yellow onions 1 med grn pepper chopped 6 garlic cloves minced 2 (28 oz) cans Diced tomato 2 cups apple juice 1 cup apple butter 1 12oz jar clover honey 1/3 cup prepared yellow mustard ˝ cup apple cider vinegar ˝ cup light brown sugar 1/3 cup Worcestershire sauce 1 (7 oz) can chilpotle peppers chopped 1 tablespoon dried basil 1 tablespoon dried oregano ˝ teaspoon ground red pepper (cayenne) 1 teaspoon salt 1 tablespoon ground black pepper pre heat oven to 425 degrees Roast elephant garlic for 45 min. Let cool a bit, then squeeze roasted garlic from each clove & set aside. In a large saucepan, cook the bacon until crisp and remove bacon from pan. Saute’ onion and green pepper until tender (4-6 min). Add fresh garlic and sauté another minute. Add pureed, roasted garlic, tomatoes, apple juic, apple butter, honey, mustard, vinegar, brown sugar, Worcestershire sauce, chilpotle peppers, basil, oregano, red pepper, salt and black pepper. Reduce heat to low and cook for 2 ˝ hrs, stirring frequently. Remove sauce and puree in a blender until smooth. Makes approximately 11 cups. Adjust Cayenne to taste. Keep in a padlocked refrigerator, or you’ll be making it once a week. -

Another, easier and less expensive recipe is:
Buy as large a picnic roast as you can cram into your crock pot.
Cut up one large onion (1/4 in slices) and line the bottom of the crock pot with these.
In a small bowl combine:
One jar of orange marmalade
4 Tblspns soy sauce
cayenne pepper (however much you think you like)
Cram the pork into the crock pot, skin side up
Smear it with the mixture.
Put the lid on the crock pot and set it on high, and foget about it for 8 hours.
Use a couple of forks to tear up the meat and make sandwiches using your favorite barbeque sauce.

Here is my favorite BBQ sauce. It is pretty quick, and I like it better than anything I've bought in the store. Every time I make it for someone else, they always want the recipe.
By the way, I usually skip the Jack Daniels and substitute with any cheap whiskey (i'm too cheap to use the good stuff on BBQ sauce). STILL HOUSE BARBECUE SAUCE - 1 cup Jack Daniel's Tennessee whiskey
- 1 cup ketchup
- 1 cup cider vinegar
- 1 cup packed dark brown sugar
- 1/2 cup onion, very finely chopped
- 2 tablespoons Worcestershire sauce
- 1 1/2 tablespoons Tabasco sauce
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon liquid smoke
Combine all the ingredients in a large, heavy, nonreactive saucepan and bring to a boil over high heat. Reduce the heat and briskly simmer, uncovered, until richly flavored and slightly thickened, about 20 to 30 minutes, stirring from time to time with a wooden spoon. Use right away or transfer to jars, cover, cool to room temperature, and refrigerate. The sauce will keep for several months. Makes about 4 cups.

Next time anyone smokes a pork butt, I recommend giving a vinegar mop sauce a try.
This is a basic recipe off the web. I use white pepper instead of black pepper, and you can use regular vinegar instead of cider vinegar.
2 cups Cider Vinegar
3 tablespoons Ketchup
2 tablespoons Brown Sugar
4 teaspoons Coarse Salt
1 tablespoon Tabasco Sauce or other hot sauce
1 teaspoons Hot Red Pepper Flakes, or more to taste
1 teaspoons Black Pepper
The use of ketchup could start a riot in some parts of North Carolina, but I like it with the ketchup
