This is what I do for "Apple Pie". Not sure if this is what you're looking for.

    1 gal. apple cider
    4 cinnamon sticks
    10 whole cloves
    --------------------
    1 1/2 Cups Everclear
    1 Cup Apple Schnapps
    not Apple Pucker ....too sour

    Cook first 3 ingredients 20 --25 min.
    do not boil!!!!(simmer)

    Remove cloves and cinnamon sticks-discard.

After mixture cools to room temperature the add
    the liquor.

May add 1 can frozen apple juice for more apple
    flavor.

Refrigerate or freeze ( don't fill bottles too
full if you freeze it!!) Make sure to stir if it has
been awhile since used to remix the liquors. Tastes
best when slighty frozen to the slush state.

Can be served with 7-up or drink plain

Just "baked" a batch Monday for today and tomorrow. 6-7 cinnamon sticks, boiled for 20-25 mins in 1/2 gal apple cider and 1/2 gallon apple juice. Add 2 cups of sugar and 2 Tablespoons of brown sugar until they dissolve. Let cool to room temp and add 2.5 cups everclear.
add a little butter rum for extra taste to each shot.
*The guys on Moonshiners added brandy to theirs which I have not had but sounds very good.
Exaggeration is a BILLION times worse than understating.

Not sure about over there, but Hy-Vee here in Hawkeye land had Junior Johnson's Midnight moon moonshine in Apple Pie flavor, just buy it. Comes in a 750ml mason jar. I think $20. Not too bad, had a bit of a bite to it, but I'm sure if you're using everclear, it'll be no different.

This is what i do minus the brandy, also i don't take it in shots, just a small glass. 2 or 3 glasses and you'll feel right as rain.

Had some apple pie 'shots' (glasses) while cooking today. This is almost exactly the same as my recipe. If I don't have everclear around I just use an equivalent amount (by alcohol content) of vodka. I don't measure too exactly, it's kinda hard to **** it up. Oh, and if you do heat it up just make sure you don't cook off the alcohol!
