Don't use much. It does smell terrible but it's a key part of most Thai cooking. It's worth shelling out a bit more money for the authentic stuff than buying most of the cheaper stuff at Hy-Vee or wherever. Check a local Asian grocery.
What's the shelf life of that stuff? I've got some an Australian buddy left behind nearly 10 years ago.
Is a key part of Tai food and I really to love that stuff. Don't get to eat it often.
