Cooking Hot Wings
Hey how do you cook wings and have them turn out like the do at restaurants? I've tried baking them for about 45 or 50 minutes, but they were a bit soggy even after I broiled each side.
Is the only option to deep fry them then? I've seen recipies to deep fry and then bake after. What kind of oil would I need and how much? I'm just a college student so I don't have access to a legit deep fat fryer. I am in an apt with an oven and stove.

Short of deep frying, the best luck I have had is to place a wire cooling rack on a cookie sheet with the wings on top. This lets them get pretty crispy in the oven, and then you can sauce them. Good luck.

Only way I every get them crispy is to deep fry them in vegetable oil. You can get small fryers from Target or Wal-Mart for anywhere from about $25-50 depending on size and brand.

Then bake in oven with buffalo sauce at 500 for about 10 minutes. Meat falls off the bone.

If you want fried chicken wings (like at Pizza Pit for example) then you bread them and then fry. If you want the wings in the sauce like at CABCo or BWW then you fry them with the skin on and then toss them in whatever hotwing sauce you choose.

I bake mine at 425 for 30 minutes, flip them then bake for another 30 minutes. I then take them out and dunk them in a hot sauce / butter mixture. I then bake then for 10 - 15 more minutes on each side. This makes them fall of the bone on the inside and crispy on the outside. You have to make sure you drain the liquid from the pan after the first 30 minutes and reapply the cooking spray liberally so they don't stick. I also season with salt, garlic, and cayenne pepper before cooking.

I wasn't sure if they put flour on their wings before frying or not.

If you want to fry them and don't want to invest in a dedicated fryer just use a normal pot and buy a cheap candy thermometer to make sure your oil is hot enough.

easy...fry them, no breading. after fried, dip in franks red hot. simple. good.

Also, make sure you have some butter in your sauce, it helps it stick to the wings.
If you truly want restaurant quality wings though, you have to deep fry them. it's the only way. There is not substitute for that deep fried texture.
