You mention WTF moments. I would have to say Evil Dead 2, Dead by Dawn has one WTF ending that no one would have ever seen coming.

Primal Fear, mostly because I wasn't necessarily expecting a twist. In a lot of the others mentioned, although the twists were good, I knew there would be some sort of surprise ending.

The Usual Suspects was the last one that I thought was great 'twist'. Seven was okay, Sixth Sense was slow but okay.

Spaceballs. Hands down. Anyone who said they knew Lone Star was a prince is a damned liar.
Matchstick Men was a great one that I had forgotten about. That was a surprisingly good movie.

But the last few min of fight club, when you really learn what is going on. WOW, I had to watch it a second time right after that.
