A long, juicy, slow-cooked pork tenderloin.
Mahi-mahi is good also.
I've also taken a liking to taking canned baby potatoes, slicing them in half, tossing them with some olive oil and seasoning of your choice, and grilling them. Very tasty.
Wife loves the grilled salmon and grilled asparagus.

This is great timing - my girlfriend's parents are coming to visit for the first time tomorrow so I need to figure out what to cook for them - I can't decide between steak or ribs, and I am going to do baked sweet potatoes. Any tips?
Also, chicken breasts marinated in italian dressing are phenomenal. It works for pork and sirloins as well.

I love to do Iowa Chops on the grill. Just a little sage rubbed on them, with seasoned salt, and let the coals burn down to nothing. It takes me about an hour and a half to slow cook them, and if they aren't cooking slow enough, I put the sprinkler on my Weber to keep the heat down.
The come out all juicy and tender and yummy, if I get it right.
