Haven't decided but leaning towards something pork probably. Last year I did hobo dinner which was yummy. Take some ground beef and you can either crumble it or make it into balls or patties, coat some tin foil with olive oil and cut up some onion, carrots, peppers, or whatever veggies and raw potatos either cut in squares or steak fries. put some cheddar cheese and seasoning and roll up into a tin foil pouch. Grill till done, usually have to turn it several times and cut into it after awhile to check. Very yummy, can pretty much alter the ingrediants and seasonings to your taste too.

Wont be grilling this weekend... But will be drinking.
Week 2 I am going to do Baby Back Ribs....
Still trying to perfect the method. My grill will cook them in 2 hours if wrapped in foil. Just need to find the right rub and bbq sauce combination. Along with this I'm thinking some baked beans and maybe some sweet corn.

for appetizers i do chicken wings with two different sauces that i tweak on my own - hot and teriyaki. I grill the wings/legs first, then dip and gril some more turning frequently so the sauce doesn't just burn on the outside. This year adding grilled jalapeno poppers with a mixture of cream cheese, cheddar cheese, and some tastefully simple taco ball seasoning, covered with a piece of bacon to keep it all in - if anyone wants to try one find me in G7.
For dinner it will be chicken kabobs for the g/f and i'm not sure for me yet - either brats or burgers, maybe one of each just to be safe :) I prefer handheld foods over steaks for tailgating.

This is not a grilling recipe, but one of my favorite things to make at home before tailgating is a chili dip. Simply make whatever kind of chili you like best, then as it's done cooking and simmering, slowly mix in flour. It will thicken up and take on the consistency of a dip.
My favorite is a white bean chicken chili with lots of small peppers.

Last year at the Iowa/Iowa State game i had an idea for a large group of people. They make crock pots that run off of propane - so heat up your meat and get some bags of chips and walking tacos would be pretty easy, not a lot of mess, people can grab a bag and still walk around, play games, etc. And if you have kids it would probably be a good idea too.

We are going to mirror the football team for the 1st tailgate this year. Burgers and dogs...keep it simple to get us back into form while not giving away too much for future tailgates.
Something we did last year for a couple of the morning games were omelets in a bag. Put a couple of eggs into a ziplock bag, add your favorite ingredients, boil for a few minutes and eat. They are delicious.

I love breakfast burritos at the early morning tailgates (obviously not on Thursday) Goes great with a cold beer!

I had one of those a few weeks ago and was very disappointed. I prefer a standard flavor brat with lots of sauerkraut.

Rabbit Stew
Rabbit stew recipe includes rabbit, onions, celery, carrots, potatoes, mushrooms, and red wine. Ingredients: - 1 rabbit, about 3 pounds, cut up
- 1/2 cup all-purpose flour
- 3 tablespoons butter
- 1 cup chopped celery
- 2 medium onions, thinly sliced
- 1 teaspoon seasoned salt
- 1 teaspoon salt
- dash pepper
- 1 bay leaf
- 4 cups water
- 4 cups dry red wine
- 2 cups diced carrots
- 4 medium potatoes, peeled and diced
- 4 ounces sliced mushrooms, sauteed
- 1/4 cup all-purpose flour
- 1/3 cup water
Preparation:
Directions for rabbit stew.
Dredge rabbit pieces with 1/2 cup flour. Melt butter in a Dutch oven over medium heat; brown rabbit pieces on all sides. Add celery, onion, salt, pepper, bay leaf, 4 cups water, and wine; bring to the boil. Reduce heat to a simmer, cover, and simmer rabbit stew for 2 hours. Add carrots, potatoes, and mushrooms; cook for about 25 to 30 minutes longer, or until vegetables are tender. Combine 1/4 cup flour and 1/3 cup water; stir until well blended and smooth. Stir flour mixture into the broth; cook and stir until thickened.
Rabbit stew recipe serves 4.

My favorite is a white bean chicken chili with lots of small peppers. That's great to know! I've got a Graziano chili I make that I will try this with.
