Just wondering what changes were made, and what advantages/disadvantages it has over the previous version. I'm waiting for some of my extensions to update before I switch over.

The most notable (at least for myself) and the biggest reason for making the switch is that Mozilla fixed the memory leak issue. Memory set aside when opening up a new tab didn't tend to be freed up when said tab got closed. This caused a fairly slow internets experience.
Firefox 3 seems to be running really quick for me so far.
However, anyone else having issues with Flash? Mine crashes every once in a while when encountering a Flash heavy site (read: ESPN)

I've been using it too long now to remember the changes/benefits. I believe it loads web pages faster. There was a couple of plug-ins that wouldn't work when I upgraded, but I decided I didn't want those plug-ins anyway.
I think it has crashed on me maybe 3 times over a very long period of time. It could be related to flash-heavy pages, I don't know. Although 3 crashes over a long period of time is not many, I don't recall any crashes with the earlier version.
If I had the decision to make again now that I have been using FF3, I would still choose to upgrade.

Install the FF extension Flashblock - that should solve your problems with flash.
