when you click on any of the options (SMS Text, for instance), what the heck is the "out of the holster" option and the "in holster" option? Do I have to set both of these for each "option (sms, email, phone, etc)"

The holster could be the leather pouch thing they give now or it could be whatever other holder it came with or that you bought aftermarket. They only matter if they are built with the little magnet/sensor somewhere inside them to let the BB know that it is in a holster. I usually set both the same....
