Protein Pancakes – 1 serving

Provides balanced meal of whole grains, low fat protein, and fruit.


Ingredients
½ old-fashioned rolled oats
½ cup 1% cottage cheese
½ cup egg substitute(or 1 whole egg and enough egg whites to make 1/2 cup)
1/8 teaspoon baking powder
¼ teaspoon cinnamon

Optional fruit topping
¾ cup frozen mixed berries, blueberries or strawberries
1 – 2 packets Splenda depending on taste

1st
Combine ingredients in blender and process until smooth

2nd
Cook on sprayed hot griddle or non-stick skillet. Turn down heat to maintain pan temperature but not to burn or cook cakes too fast.

3rd – optional
Heat desired fruit in microwave for 90 seconds. Let cool slightly, add Splenda, and blend up in mixer. Pour over pancakes right before eating.
