For steaks I always marinade with soy sauce, Mrs. Dash (original) and a little McCormick's Montreal Steak seasoning... yummmmmmmm :-)

My favorite mix for grilling chicken is Lawry's seasoned salt, basil, oregano, black pepper, and a dash of rosemary.
I avoid most premade mixes like McCormick Grillmates because they contain wheat, a no-no for my wife.

also, not a spice, but i love pepper in/on just about eveything too.
i have an awesome recipe for a potato "salad" that's not like potato salad at all. it's served hot and has potatoes, bacon, red onion, mustard seed, dijion mustard, and apple cider vinegar. it's fantastic!

I messed up a chilli recipe once by forgetting to add the cumin - never again. Al is right about it being widely used in Mexican food.

I enjoy all of the different types of curry as each has a place depending on the ingredients and desired finished dish. My absolute favorite is orange curry - a mix of yellow and red. Try it with stir fried with diced potatoes, onion, green pepper, coconut milk, and either chicken or shrimp. The mixture of the two curries is synergy at it's best.

Your spices should match/pair with the main ingredient....it really depends on what you are cooking....give us an example..

I use a lot of chicken, beef, and pork. I've been getting salmon more often. I've stopped getting shrimp....mainly I don't really know what to do with it.
I don't have a grill to use, but I do slow cook meet in the oven. I mainly use a skillet.
