As long as the Meat temps out at 155f or above when served it should be fine. That IRCC is the standard for holding food. Probably the Insurance for the whole chain is increased due to the method they use, right or wrong, so corporate is going to change it to keep costs down not for food safety concerns. That said, E Coli is often deadly to the very young, elderly or immune-deficient. If the local inspector has cleared the equipment it is fine. Those guys are sticklers.
I have been involved in a chain restaurant compromising quality and methods to decrease liability. Bad idea.

The owners issue is the inspector came in and saw something HE did not like and issued a citation while ignoring FACTS about the cooker and its uses. The ONE inspector has made an issue out of something that has served thousands of peope without incident. The ONE inspector decided this based on his view and lack of knowledge.

I agree, but I also have to ask: if it's unsafe and risking the public's health, why has this issue been going on for over two years?
Taylor's was cited for this in December 2007. If it was really dangerous, the inspector would have made them change it immediately, or close the store until it was. It must not be that big of a deal...

Does Taylor's also run the one in Tama or wherever (near the 4 way stop)? It seems to be better than the others as well.

I can see both sides. You have to have some rules in place to protect people from blatant health concerns -- like Chinese restaurants leaving uncooked chicken out at room temp for days at a time.
On the flip side, you COULD drown in a bowl of soup but I don't see them requiring lifeguards at restaurants.
Seems like the owner is making a big deal out of nothing in this case though. Spend $50 on a warmer and get it over with.

Grew up in M'town, but don't get back as often as I would like. I heard an awful rumor about Taylor's the other day and would like some clarification.
Do they have ketchup available at Taylor's?

I had one up in Spirit Lake location one night....you know how a bun gets tough when you overnuke it? That's their answer to locally cooked food not bought from them.

isn't it common sense food safety that you shouldn't do that? Oh you know, that nasty government is telling us we have to do it. So the hell with them. Who cares if it really is better or safer, I'm a rebel damnit. If nothing else, the guy is a moron because he's leaving himself up for endless law suits if anyone even gets the slightest stomach ache at his shop. I agree, don't follow everything the government tells you, but this one is a no brainer. They really are looking out for the health of people here. Don't believe it, go ask Jack in the Box how undercooked meat got them in the news.
