The Dells is great, the Family and I go there every year for a week. It's expensive though.
If you are into Hiking and outdoors, a really neat well kept secret is in the Starved Rock Area of Utica, IL. They have a waterpark hotel down there (never stayed there) and there are two really neat state parks. Starved Rock St. Park and Metthiesson St. Park, within a few miles of each other. Metthiesson is an especially nice hike as you walk through the canyon and come across a number of interesting waterfalls along the way.
Growing up if we only had time for a couple days we always went to the dells and enjoyed it as kids, now it's usually Chicago for a couple days it's a great city and there is a good amount to do if you know what you want and where to look.
My girlfriends family usually goes down to Branson and the lake near there every couple of years and love it.
