I think we are going to hit the pelican bar this year. Looks fun: 
It is just a shack a mile out into the ocean that some guy built using driftwood and turned it into a bar. You just relax out there and drink redstripe and eat fresh fish that you catch and they cook for you.

I have been to Jamica three times, Hedinism III before I was married in 1998, Sandals Royal Carribean in 2003 for my honeymoon, and Sandals Negril in 2007 for a friends wedding. All are all-inclusive and all were well worth the money. The thing is an all-inclusive resort is not for everyone, For me I have never left the resorts, don't need to, all the food, beach, pool, drinks, entertainment and fun were all there. To me that was what I was looking for in a vacation, time to sit relax, drink, eat and have fun with the people you meet. If you are not a drinker, or want to spend lots of time off resort an all-inclusive is probably not for you, if you like what I describe I would try the all-inclusive. I loved Sandals and would go back anytime, but have heard many good things about Couples resorts also. All are Adults only, and the only way to go if you are not with kids. Six adults who like to relax, drink, eat and have some local entertainment will have a blast at all-inclusive resorts.

Just got back from spending a week at Couple Negril: Couples Negril - Caribbean All Inclusive Tropical Beach Resort & Spa
What a great trip! Loved the resort and the vibes going on there. We took day trip just down the road to Couples Swept Away, but thought that place was a little too crowded(the rooms did look a little neater).
The place we stayed at was very relaxed and almost no crowds. Great beach and lot's of great bars, food, and activities. The Catamaran cruise was extra special, but watch out for that Jamacian Rum Punch!
Great great place to connect with your signifigant other. -

another vote for Couples. We honeymooned at San Souci in Ocho Rios last summer. Not the beach you'll get in Negril, but we aren't picky seeing as our previous beach experiences were on small lakes, lol. Dunns' River Falls is a tourist trap, but neat nonetheless. We ended up having way less ambition and energy than we planned and didn't do the rum factory and banana plantation tours that sounded fun.
have to keep watching this thread - would love to go to CSA or CN sometime, but can't decide between the two!

I would highly recommend Couples Negril to anybody. We were there the first part of November. I can't wait to go back someday. The staff was amazing. We also ran into two couples from Iowa that were not in our group. One of them had been to that location 22 times. That says allot right there.
