If you can get a political science class with Dave Peterson, do it. That guy is a great teacher

Not on the list, but HRI 383: Intro to wine, beer, and spirits. If you are 21, it is so worth it to drink for a grade and it is 2 credits.

American History series 221-222 is easy for most people with a decent high school class. Son really enjoyed History of Rock n Roll, which I think is Music 304. However, the prereq, while easy, is not as interesting.

Religion 210 if the prof I had is still teaching it. Doesn't look like he is though.

Music 101 and 102, which is History of Rock & Roll, were pretty good classes. When I took 102 (in 2000), the TA had a guitar that he had taped up with electrical tape to look like Eddie Van Halen's guitar with all of the colored stripes on it. That guy could play a mean guitar.

I thoroughly enjoyed both classes, and I wasn't really into music much before that.
