Before he became known for overacting and being kind of insane, Nic Cage was a likeable protagonist in Valley Girl. I haven't seen the movie in years and I'm sure it didn't age well but teenage JCyclonee thought he created a great character.

Are we limited to actors whobecame higher-profile after the debut/early role?

Good example. I thought about that one, but didn't know if it'd qualify, he had a few other movies prior to that (although Grape was the first one I remember)
Hard to say, some of these are first roles and a few are early breakout roles.

I was going to mention Gary Oldman in Sid and Nancy. While not his first acting job it certainly was a breakout role for him.

I think that it should be breakout films. First Roles and Breakout Roles are rarely one in the same. There are obviously some outliers, though.

Sorry, for breaking the rules @SCyclone . Didn't read the whole OP :D

A bit older

William H Macy - Fargo
Viola Davis - Doubt
Jeremy Renner - The Hurt Locker

Norton and Portman were on my list as well
Macy was actually in Boogie Nights. Probably Mark Wahlberg's breakout role. Also Heather Graham, and John C. Reilly.

Maybe didn’t upstage Nicholson completely, but worth a mention I think.

Louise Fletcher (Nurse Ratched), Brad Dourif, (Billy Bibbit) and Will Sampson (Chief Bromden) “One Flew Over the Cuckoo’s Nest.” Fletcher had done a lot of TV, I think this was only her 3rd movie role. It was the first credited movie role for both Dourif and Sampson. (Chief isn't featured in the following clip)

This may sound strange but John Travolta in Pulp Fiction. Yeah he was a huge star back in the 70's. However, he became a C movie actor and then out of nowhere he nails the Pulp Fiction movie and is basically a whole different actor at that point than he was before. Does that count?

Ben Affleck in Dazed and Confused. So classic. One could also argue that Matthew McConnaughey launched in this movie as well.

That movie launched a thousand ships, didn’t it? In addition to Affleck and McConnaughey, other cast members of note, Rory Cocrhane, Parker Posey, Adam Goldberg, Joey Lauren Adams, …
