Nebraska would be able to count a win over Bethune-Cookman toward its bowl eligibility because the NCAA allows FBS schools to count one win over an FCS school.

I'd be willing to bet that the contract states the date of the game. In that case they were not obligated to play the game the following day.

Akron had one opportunity to schedule a game on that date. They agreed to forgo all others and enter into a contract with Nebraska for that date. They fulfilled their part of the bargain and did not have an opportunity to make hay anywhere else that night. You’d think both sides would have sought to have specific language on such an event as weather related cancellation or postponement, including defining reasonable accommodations for an additional night.
If both sides left it to chance, costs incurred seems reasonable imo.
