If the entire world could only have 5 types of cheese, and it was up to you to decide, what would you pick? I think I’d go with:
Cheddar
Mozzarella
Cream cheese (for cheesecake)
Gouda
Brie / Feta / Gorgonzola / Munster... I can’t decide!

Smoked Gouda
Extra Sharp Cheddar
Blue Cheese (Stilton)
Wall Street Gold
Havarti (Dill Havarti would be a bonus)

Most underrated: Fontina
Most overrated: Provolone

Cream Cheese is good on everything.
The snobs will say they’re not cheese but American and Velveeta are great.

This is a "dumb" I hated to give. But you are wrong. As wrong as wrong could be.
Velveeta is a brand name for a processed cheese product that tastes like an American cheese, with a softer and smoother texture than non-processed cheese. ... It was reformulated in 1953 as a "cheese spread", but as of 2002 Velveeta must be labeled in the United States as a "pasteurized prepared cheese product."

I once bought over a hundred euros worth of cheese in the Netherlands and hauled it around for a week before bringing it home and eating it.

Plus some queso blanco dip that probably needs to be thrown out soon.

It all depends upon the situation.

Feta is great with certain Mediterranean type foods.
Blue cheese is great on red meat. I also like blue cheese crumbles on a loaded omelet.
There's a great cranberry white cheddar sold at, of all places, Aldi.
That horseradish cheese is fantastic. I don't even like horseradish all that much but that cheese is great.
Also, in the processed cheese food category, Velveeta's queso blanco can't be topped for making warm queso dip.
