None of that stuff that happened after the fight has anything to do with what they were being paid for. I'm not a fan or anything but even combat sports can be done in a manner that's not embarrassing for the sport.

Khabib then jumped the fence and started pounding someone in crowd- meanwhile McGregor is standing in ring wondering what just happened and presumably one of Khabib’s teammates jumped the fence and came in and sucker punched McGregor. Cops everywhere- just a complete ****show! Each fighter ushered out under heavy police protection. Bruce Buffer made announcement of winner in an empty ring.

Yeah, but the whole promotion of these bouts builds up animosity between not just the fighters, but their entire teams. It's a powder keg, and that's exactly what the UFC wants. Way easier to sell a fight where the participants hate each other. People shouldn't be shocked to see this extra stuff happen. Doesn't make it right, though.
